Heat a large non-stick pan over a high heat. Add the salmon (if you are using a good non-stick pan, there is enough oils in the salmon to cook it without adding any additional oil.)
Cook for 3-4 minutes each side. Meanwhile, mix the glaze in a bowl by adding the honey, oil, lemon juice, mustard and ginger. Mix well and set aside. Chop the spring onions and set aside. When your salmon is just about cooked, add the glaze and take off the heat. The glaze will caramelize and get the salmon sticky and brown. Then, add the spring onions.
To cook the Spinach, heat in a saucepan with a tablespoon of olive oil. Add the spinach and cover over a medium heat for 2-3 minutes. Mix in a tablespoon of sesma seeds and serve with the salmon on top.
