Spaghetti Acorn Squash

Best dish in the book. I have spent my life very close to the PALEO plan for 20 years. Cutting out most flours and carbs for the main part of my food. This dish got me very excited. Itís the carb craving without the guilt. I have not stopped making it since the 1st attempt and hope you will try too.

Ingredients (serves 2)

1 acorn squash

2 courgettes

2 cloves crushed garlic

1 can tomato sauce (227g)

2 tablespoons olive oil

2 tablespoons Sun-Dried Tomato paste

Handful fresh basil

Instructions

Peel the acorn squash, cut in half and scoop ot the seeds and discard them. Peel the courgettes. Now grate them with a large grate level. Heat a large non stick pan. Heat half the olive oil and add the squash. Toss over medium heat for 3 minutes. Add the remaining olive oil. Cook for another 2-3 minutes and add the garlic, tomato sauce and tomato paste. Reduce the heat to low and toss the pan. Take of the heat. Tear the fresh basil and serve.
